I just love quinoa... and it's so easy to love with how easy it is to make and it's so low maintenance and so hard to mess up! So I made this tasty little number for my lunch this past week. It was tasty!
Ingredients
- 1/2 cup qinoa
- 1 cup water
- 1/2 can of black beans
- 1/4 pound deli-sliced turkey breast, cut into little pieces (For veggie only, skip this!)
- Salsa verde
- Salt and pepper, to taste
- cilantro
- Boil the quinoa in the water, as instructed on the package.
- Once the quinoa is cooked, turn down the heat to low.
- Add the black beans and turkey breast, stirring constantly.
- Add the salsa verde, pepper, and salt as you like! (I added lots of salsa and pepper, but hardly any salt)
- Garnish with cilantro.
- Enjoy!
