J and I love our veggies... But these are by far the best ones we've had! The only problem was I only used half of the head of cauliflower and we really wanted more than I made!
This little number goes so perfectly with the Tikka Masala flavors... And adds a little fresh produce to the meal.
Ingredients:
- 3 Tablespoons olive oil
- 1 1/2 teaspoons ground cumin
- 1 1/2 teaspoons coriander
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 head of cauliflower, cut into florets
- Lemon wedges
- Preheat oven to 450f.
- Mix together oil, coriander, cumin, salt, and pepper until well combined.
- Add cauliflower, tossing to coat.
- Transfer cauliflower to baking sheet and roast, stirring halfway through roasting.
- When tender and golden brown (about 20-30 minutes), remove from over.
- Season with salt and pepper and lemon juice. (Instead of the wedges I put the roasted cauliflower in a bowl, squeezed the juice over the little veggies and stirred)
- Enjoy!
